QUICK AND EASY HAM AND CHEESE Rösti
1 tablespoon butter
3 / 4 cup chopped cooked ham
1 / 2 cup chopped onion
1 / 2 cup green bell pepper, diced
1 tablespoonPimento
1 can (10 3/4-oz) condensed cheddar cheese soup
1 / 2 cup skim milk
1 teaspoon mustard
4 cups frozen French fries, diced or shredded

V8 Vegetable Juice

Melt in a medium skillet over medium heat the butter. Add the ham, onion, paprika, allspice and the pan. Cook until vegetables are tender, crisp. In a bowl, add milk to the soup along with the mustard and stir until blended. Add the cheese mixture and potatoes in pan. Heat the mixture to aCook, reduce heat to low. Cover and simmer for ten minutes or until potatoes are tender, stirring often.

QUICK APPLE SPICE MUFFINS bread
2 cups whole wheat pastry flour
1 teaspoon salt
3 teaspoons baking powder
2 eggs
1 / 3 cup honey
3 / 4 cup skim milk
1 / 2 cup unsalted butter, melted
1 cup applesauce
1 teaspoonCinnamon
1 / 2 teaspoon ground ginger

Preheat oven to 400 degrees. Grease 12 muffin cups aside.

In a small bowl, combine the flour, salt and baking powder, combine well and set aside.

In a medium bowl, beat the eggs. Add milk and honey, butter, applesauce, cinnamon and ginger and mix well. Add the flour and mix the egg mixture. Divide the batter into prepared molds and bake at 400 degrees about 20 minutes or until aToothpick inserted in center of muffin comes out clean.

3 cups V8 vegetable juice
1 teaspoon prepared horseradish
1 teaspoon Worcestershire sauce
1 / 2 teaspoon red pepper sauce
Celery sticks attached with small leaves, if desired

Combine the V8 juice, horseradish, Worcestershire sauce and chili sauce together. Pour over iceto serve. Garnish with celery in the glass, if desired.
